In Chicago, spring does not really, truly arrive until May. Sure, we get a few teases of delightfully sunny days, near-60-degree temps and light jackets. But then, without fail, Old Man Winter wheezes at us. The temperature drops back into the 30s. The wind blows cruelly. We hear those dreaded words: “wintry mix.”
Do I cower in my apartment? No! I turn to warm comfort food, though, such as this dish from the New York Times: Brown Rice with Carrots and Leeks. I added a grilled chicken breast to get a bit more protein in there. This meal is warm and hearty and just bright enough (with some squirts of fresh lemon juice) to remind me that spring is on the way.
