Cocoa-coconut meringue cookies
Yesterday, armed with a new recipe, I set out to make coconut meringue cookies to take to a friend’s house. I discovered, after the first batch came out of the oven, that I do not find much merit in meringue. There’s no substance! Just outer crunch and air. It’s a cookie without the actual chewy-dense-chippy goodness of a real cookie. I also realized, after the first cookie sheet was in the oven, that you could add cocoa powder to the recipe for a bit of chocolate flavor. I sprinkled cocoa powder into the remaining “dough” (does sugar + egg white + coconut = dough?), but I only ended up with a few of the cocoa-coconut meringues. I was stillĀ  craving some substance to chew, something that could be dunked into a glass of milk without dissolving into nothingness. And taking meringue cookies to a potluck seemed inadequate.

Turns out I’m not the only one who could live without meringues. The brownies I took were a big hit.
